Technical Notes: 2013 was an excellent year at Pettenasco, both for the Chardonnay and the Pinot noir. The period of ripening was sunny and fresh. The grapes reached a very good balance and concentration of ingredients.
In the Pinot noir vineyard six small harvesting areas, with different characteristics of ripening were identified. The harvest of the batches dedicated to the “Author Proof” wine started on 13th September.
Ten days after we gathered the batches for the vinification of the traditional red wine and the gathering went on for four days with an important selection of the grapes.
Fermentation: the spontaneous fermentation was made in French wood. We used the vats and the small truncated cone shaped tub, specifically developed to keep separate the cru, in order to respect the ripening times and the harvest moment for each batch. The maceration lasted about 20 days with daily manual punching. The wines were then racked and were put in barriques of 2nd and 3rd passage for the malolactic fermentation.
Refinement: during the winter the wines were kept in the natural cold of the cuvier for their spontaneous stabilization. In Spring we removed the dregs and during the following months the wine made a part of its refinement in barriques and another part in steel vats. The assemblage took place on 14th October 2014 and we decided to go on with the final refinement in steel vats till the bottling. A last pouring was done to remove the natural sediments, avoiding the filtration.
Bottling: by hand on 28th April 2015
Tasting notes: it is a resourceful wine, which continues to improve in the glass even after hours. Its colour is bright cherry red, the aromas are intense and of great varietal expression. After the first impact of small wild fruits and a sweet boisé which is very well integrated with fruit, some aromas of spices, chocolate and dried roses emerge with elegance and decision. In the mouth it is juicy, firm with different complex flavors mixing together harmoniously. It has refined and full-bodied tannins with a pleasant freshness prolonging the notes of pomegranate and cherry in the aftertaste. It is still young but it shows thickness and character.
Suggested serving temperature: 16-17°C
